Dave came across this cool pancake recipe that would be great for people on a gluten-free diet. Its an old Roman recipe which I think he found on the BBC site. We had it for breakfast yesterday morning and they were quite tasty.
Heres the recipe:
OVA SFONGIA EX LACTE (Pancakes with Milk)
* 8 eggs
* 600ml milk
* 100ml oil
* a little bit honey
* a little bit ground pepper
Mix eggs, milk and oil until you have a pancake dough. Fry in a pan and serve topped with honey and a little pepper. It wasn’t bad – needed to be cooked on quite a high heat, and poured twice, so it was thickish, but they were quite tasty. For someone forced onto a flour-free diet who was missing their pleasures it would be quite good
Dave now tells me that the recipe supposedly came from Apicius’ cookbook : “De Re Coquinaria” by “Marcus Gavius Apicius” which dates from the 1st century A.D.
